Our cuisine is what I would call
"European Farmhouse." The farmhouses in France, Spain and Italy tend
to be pretty elaborate Chateau's or large estates. Beginning in 1982 my wife
and I began bicycling all through Europe. We'd go back about ever other year
and did this until about 1995. Our menu is based on our adventures and
reflects this hardier and more robust style. In some cases the chateau has a
celebrated Chef, but most tend to have one of the "peasants" that has been
well trained to prepare the specialty dishes of the region. Hence the term
"Peasant Cuisine." |
